Is there a way to find out how many “views” my booth has received OR even better, how many times an individual listing has been opened / read?

when look at the list of your items it will show views and how many ad views (if any) your items will have

Hover your mouse over the Selling tab, in the dropdown select Booth Stats. That will show you how many views you’ve had. You can click on individual items to see how many views that particular item has had.
