Payment options for clients?

Hi. Where can I find the list of payment options that clients have – Visa, MasterCard, PayPal, etc? Can I modify it, for instance, refuse check payments?

I know this. I’ve set up my PayPal from the begging. I didn’t mean my payment options. I meant the client’s payment option, for instance allowing them to pay with debit cards and PayPal, but not allowing them to pay with echecks.
