*Korea Jirisan 'Green Mountain' Artisan Organic Green Tea *

This freshly harvested, organically grown, ujeon (woo-jeon) nokcha was picked and processed in mid-April 2013. Introducing a newly discovered tea artisan Lee, Deok-ju whose family has been passionately growing and camellia sinensis for over 40 years in Hwagae Valley.

 

This new offering called 'Green Mountain' is from their tea garden overlooking the Seomjin River, one of the longest and most pristine rivers in Korea.

 

Using traditional korean processing techniques, these fresh ujeon shoots were carefully handpicked, gingerly hand tossed while roasting in a cast iron cauldron, and hand rubbed to release their sap which produced this delicately fragrant and refreshing nokcha.

 

The dry ujeon flushes have a colorful variety of forest green hues with a vegetal woodsy and pleasant moss-like fragrance.

 

The initial and second straining of the tea liquor reveal young, wet ujeon flushes having a bright olive green color to them in the pot.

Tea Steeping Tips:

Use the best available fresh water to truly appreciate and experience the tasty nuances this premium tender leaf tea has to offer.

 

Steep these delicate ujeon flushes 25~30 seconds at 65ºC~70ºC /149~158 ºF on the initial infusion to yield a bright golden green nokcha liquor with a delicate, floral and mild vegetal taste.

 

To prevent astringency and destroying the potentially beneficial properties of these delicate nokcha shoots, it is very important both to not use boiling hot water temperatures and to keep steeping times short.

 

One should be able to make at least three to four 250ml pots of nuanced fresh-tasting nokcha using the initial serving amount of ujeon sprouts.

 

Note: Increase steeping times on subsequent infusions to compensate for lower water temperatures.
